After Eight Birthday Muffins

Today is my birthday. It is tradition in our office to make (or buy) cakes to take into work, so this year I made After Eight Muffins. A bit of an experiment that worked really well, so I am sharing the recipe with you all...

Makes 11-12. You need a muffin tin and muffin cases.

Ingredients
255g Plain Flour
2 teaspoons of baking powder
1/2 teaspoon bicarbonate of soda
1/2 teaspoon salt
120g caster sugar
5 tablespoons cocoa
1 egg (I used medium, but large works fine too)
240ml milk
1 teaspoon vanilla essence
90ml (6 tablespoons) of vegetable oil
1/2 a box of After Eights

Method
1. Preheat the oven to 190/200 degrees, gas mark 5-6
2. In a large bowl sift together the flour, baking powder, bicarbonate of soda, salt, cocoa and then stir in the sugar.
3. In another bowl (or a measuring jug) beat the egg with a fork. Stir in the milk and vanilla essence. Then pour in the oil. Mix.
4. Pour this wet mixture into the dry and mix together until just combined and there is no dry flour. It will be lumpy, this is what you want. It should drop off the the spoon in loose globs, not pour like a ribbon (add more flour if it is too runny). I use a metal spoon, rather than a wooden spoon, for mixing as it is easier to get the flour from the bottom of the bowl.
5. Break 12 After Eight Mints into the mixture and stir in roughly. I found they broke into quarters fairly easily.
6. Fill the muffin cases 1/3 full of the mixture, add half an After Eight, then fill to approx 3/4 full. You should be able to make 11 or 12 muffins from this mixture.
7. Bake for about 20-25 mins, until the tops spring back when pressed. Mine were a bit gooey when they came out of the oven (it was the After Eights melting) but the top of the muffin was cooked and springy.
8. Eat. I bet they would be good with ice cream.

Thank you to everyone who commented (and wished me happy birthday), I certainly have a full reading list for the summer. I've started on "The Line of Beauty" by Alan Holinghurst which I got from the library last week. I've also ordered The Time Travellers Wife with my birthday money from my Mom and Dad.
I'll be back soon with photos I promise, completed stashbuster spirals, a new chevron sock design and a nearly finished Swallowtail shawl.

Running Kites

It's my birthday on Sunday, so time to roll out a birthday competition.
However, I'm going to stray away from knitting for this one.
This week I have read a book. Not really that amazing you might say, but I realised it is only the second book I've read all year. I used to devour at least one book a week when I lived in London. I started knitting on the way to work because I was buying far too many books (the library was never open when I was home). Then I moved house and the library was next door and I went a bit more often. Since I moved back to Wolverhampton I've hardly read anything, too busy knitting on the train and the bus. I've been to Central Library in Brum a few times, but never found my way to the fiction section. On Monday "The Kite Runner" practically jumped off the shelf into my hand. It's a book I've wanted to read for ages, it was on 7 day loan, so I knew I had to start straight away. I finished it at lunchtime today. I cried on the bus this morning reading it, I stayed up far far far too late last night reading it. So, if you haven't read it, I thoroughly recommend it.
So now to the competition... That book has put me right back in reading mood. What should I read next? The only other book I've read this year is "On Chesil beach" Ian McEwan. My book reading list at the moment consists of only "The Time Traveler's Wife" by Audrey Niffenegger.
Now for a prize, I'll stick to knitting for this one.

Birthday Celebrations!

Thanks for all of the birthday wishes. I had an amazing weekend with all my friends. Here is the evidence.

I also managed to get Kerry to model her skirt. It looks fab.

And finally, my Secret Pal 10 parcel as promised. Beautiful Knit Picks Alpaca Cloud in a gorgeous sea green colour called Tide Pool. I need an easy lace shawl pattern for this I think... any ideas anyone?
Some Stroopwafels (as requested - yum), Blooker Cocoa (I'll make some muffins for work with this), toast sprinkles, bubbles, mini-sellotape and clips and finally the best stitch markers. They are binary, so you can use them for row counting. Genius! Thank you SP, I love everything and I feel well and truely spoilt.
Right, must go and help TT put up the bookcase from Ikea - finally I get somewhere to store all of my books and knitting things. Yipeeeeee!

The big 3 0
